Celina’s Marc Lacuesta To Appear On ‘Pickler and Ben Show’

(1-8-18) Celina grad and now in the recording industry in Nashville, Marc Lacuesta,  will be in a chili cook-off on the nationally syndicated Pickler and Ben Show January 22nd.

Lacuesta’s company, Lacuesta Productions, presently handles record creation, including songwriting, programming, instrument tracking and overdubbing, vocal tracking, editing and mixing. Clients include Warner Brothers Records, Sony Records, Word Records, Dualtone Records, Brentwood Benson Records, Universal Records, Irrational Games and Vivendi Universal Games.

Marc talked about his recipe:

I’ve developed my chili recipe over the last 18 years, but it started being consistent about 10 years ago.  It is a black bean chili with ground beef, and a certain mix of spices.  I start it in the crock pot at 8pm the night before and it is at peak tastiness at 7pm the next day

Lacuesta’s Special Chili Recipe

CHILI SEASONING INGREDIENTS

  • chili powder
  • cumin
  • smoked paprika
  • peri peri
  • flour

INSTRUCTIONS FOR MAKING MY CHILI SEASONING

Combine 4 tablespoons chili powder with two tablespoons of cumin, two tablespoons of smoked paprika, one teaspoon of flour, and a half teaspoon of peri peri. Add small amounts of the varying ingredients to the mixture until it tastes right.

CHILI INGREDIENTS

  • 2 lbs ground beef
  • 5 cans black beans
  • 3 10oz cans RoTel Chunky Diced Tomatoes and Green Chiles
  • 2  medium yellow onions
  • 1 bunch green onions
  • 5 cloves garlic
  • 1 can light beer
  • 2 tbsp olive oil
  • 1 8oz package shredded cheese of your choice
  • adobo powder
  • salt
  • pepper
  • red pepper flakes

INSTRUCTIONS

1.    Cut off the bulbs of the green onions and dice the green part, set them aside for garnish.  Dice the bulbs of the green onions, the yellow onions, and the garlic, and then heat the olive oil at medium heat in a large dutch oven. Sauté everything in the olive oil until the yellow onions are translucent.

2.    Add the ground beef to the dutch oven, season with salt, pepper, red pepper flakes and adobo powder, and brown the meat with the onions and garlic.

3.    Add the black beans, diced tomatoes and green chiles to the dutch oven. Drain the liquids from the cans before you add the beans and tomatoes to the dutch oven. Season with the chili seasoning and bring to boil. Once it boils, turn down to low heat.

4.    If the consistency of the chili is too thick, add beer until it is the desired consistency. Drink the rest of the beer while waiting for the chili to finish cooking. If necessary, open another beer and drink that one as well.

5.    Serve in a bowl and garnish with cheese and diced green onion.
